The latest addition to the @healthsynergy x @coconutandbliss nice cream series. This recipe was inspired by our Mayan Hot Chocolate from our Ebook – The Ultimate Chocolate & Caramel Collection (available to download here).
For a more ice cream-like consistency, we recommend making this recipe a day ahead, freezing overnight and then leaving to soften in the fridge just before serving.
For a nutritional boost, we also add a tablespoon of Pro Plenish marine collagen. This product does wonders for your hair, skin and nails (more info on this coming soon). We have added it to our smoothies/nicecream every day for about six weeks and have been thrilled with the results.
4 frozen bananas
2 tbsp peanut butter
1/4 cup cacao powder
1 tsp vanilla bean powder
1/4 tsp Himalayan salt
1 tsp mesquite powder
1/4 tsp chilli flakes
1/4 tsp cinnamon
1/4 cup cacao nibs (to stir through)
- Combine all ingredients, except cacao nibs, in a high power blender (we use a vitamix) and blend until smooth
- Transfer to a bowl and stir through cacao nibs
- Either place in the freezer for a few hours for a more icecream-like consistency before serving or serve as is
- Top with extra peanut butter, cacao nibs, coconut or your choice of toppings
